Eggplant Lasagna

For 10 people ()


  • 2 eggplants, sliced about ¼inch
  • 4 tablespoon(s) olive oil
  • sea salt
  • fresh gruond black pepper
  • 1 batch marinara sauce
  • 3 pound(s) lean ground beef or turkey
  • 1 15oz package Ricotta cheese
  • 3 large eggs
  • 1 cup(s) grated Parmesan cheese
  • 1.5 cup(s) grated Mozzarella cheese

Eggplant Lasagna Directions

  1. Preheat oven to 350 degrees.
  2. Slice eggplant into thin strips and place on a baking sheet. Brush with olive oil and sprinkle with salt and pepper. Roast in the oven until tender, about 10 minutes.
  3. Prepare marinara sauce, including meat if preferred. Simple Marinara Sauce recipe HERE.
  4. Mix together Ricotta cheese, eggs, and Parmesan cheese in a separate bowl.
  5. Prepare a large baking dish with non-stick cooking spray and begin layering lasagna as follows: sauce, cheese mixture, eggplant, cheese mixture, sauce and then top with Mozzarella cheese.
  6. Bake until bubbly, about 30 minutes.
